Bitter Sweetness Behind the Alchemy

There's a certain kind of person I think about as I make this vision into reality, an inspiration every time I create, the fuel why ideas have to be reimagined. The ones who love food with their whole heart' even when their bodies don't always love it back.
You've met them. The Grandfather who still loves sweet breads despite of the warning. The sister who struggles to keep the ideal number on the scale, or the niece who just can't, because of diet limitations. Maybe you are them, sweet-toothed rebels, the "just one bite" negotiators. The racoon raiders of the unguarded candy jar. The stubborn, joyful, life-loving people who don't want to feel left out just because their weight, diet, or insulin spike says otherwise.
I grew up around someone like that - adoring carbs and sweets with the enthusiasm of a child and the determination of a grown man, refusing to give them up. Watching that tug-of-war between joy and restriction as he sneaks in the supermarket's confectionery isle, pile chocolates and candies on his cart, stack it to his hidden stash and covers them believing no one would notice. I've seen the struggles, not just his but in different faces. Made me wonder if holding back is really the only answer. That would be a sad way to deal with such problem. With the same affection for food and a desire to explore what's possible, I started the journey of treats reinvention. I don't want the idea of the joy and comfort of food being taken away, I wanted to give it back - in a way that is balanced, still the same and are good even with the restricted.
Because food isn't just fuel. It's memory, it's connection, it's warmth.
Everyone should be allowed to enjoy.
